I haven't been updating my thread lately... and haven't been taking pictures either.  By the time I remember, we're almost done eating...

Some weird combination dishes for you to look at.  This ba-no kapoon soup is my new favorite.  I've been sick and I wanted some soup, but didn't want to eat Campbell's soup from a can, plus I didn't feel like slaving all day for real kapoon or pho.  So I remember someone posted up some soup that looked like kapoon but wasn't, I forgot what it was called.  So working from memory, and a really vague idea of what I wanted, somehow, I created this ba-no mild flavor soup with ground chicken or beef and since all I had was kapoon noodles, I used that.  It was actually quite tasty with a little help with fish sauce and some chili garlic sauce.  The last bowl was without chili garlic, but I did add some pho paste. LOL  Weird, but tasted alright and it hit the spot, so that's all I cared about.

Dang, this all looks delicious! Too bad I don't eat like this regularly anymore! .

Stuffed chicken legs? What do you do with the meat that you take out?

yubnag, I can't do salad for dinner.  Instead, I have chicken salad for lunch almost everyday for the past 2 years.  It can get boring at times, but I'm getting used to it.  I don't have big lunches anymore and it leaves me room to eat other dishes for dinner.

The meat that you strip from the bone is ground to make the stuffing.  ;D

I didn't get it from that blog, but I made my stuffing a little different from that and use mozzarella cheese instead, but yum ricotta cheese sounds good too.
