Todays lunch:
Pan seared salmon with pear mango salsa (onions, tomatoes, jalapenos)
Stir fried green beans with shallots, garlic, and garlic chili paste
Quinoa

Total prep time: 35 minutes
20 minutes to dice up fruits for the salsa
5 minutes to cut up green beans, onions, and garlic
10 minutes to cook make the quinoa and let salmon sear in pan
While the quinoa is cooking I make the green beans which take about 10 minutes to cook as well

Here's a frittata.  Simple ingredients like yams, shallots, mushroom, leek, and eggs.  Made enough for lunch this entire week.  Enjoying with a spinach-kale salad, lemon-olive-oil-garlic dressing, and two boiled eggs.

Here's how the frittata looks like up close.  It looks a little spongy but the taste is wonderful.  The things on the side are tofu strips that I've baked with leek.  I've been cooking a lot with leek lately.  I just buy one big one and cut off thing slices into everything I make, and it smells awesome in the oven when cooking with garlic.

Lunch for the week:
Grilled chicken with a basil pesto (basil, mint, feta cheese)
Quinoa with onions
kale salad with cannellini beans and jumbo shrimp sauted with lemon juice, garlic, and olive oil.

Also, about one hour prior to going to bed I mix a glass of water with half a scoop of whey protein.  This activates your metabolism or keeps it running (helps you burn fat) while sleeping. 

Really? I feel like I'm going to gain more weight.

That's just water weight.  Of course, make sure you get some exercise in during the day.  Otherwise that protein becomes fat.
