There was a previous topic about knives in the forum. I'm sure that if it's a part of a collection it doesn't see much use, thus it probably remains fairly sharp. However, those of you who do use your knives; how do you keep them sharp? That is, how do you sharpen them? After all, there is no point if having a dull but flawless looking knife. Do you use a belt sander? Scratches?
I use a sharpening stone. I love my Shun sharpening stone, but I learned quickly that knife sharpening is a skill. On top of that, it's a skill I don't have. I end up dulling the blade or changing the profile. '
