That one looks like a dish called mi Quang

Not pho.  Quang is a dialect of Vietnam.   It is eating dry style and the flavor comes from the mud shrimp paste sauce that you add to your Papaya salad dish.

Yep it's mi quang, at least that's what it says on the menu if I remembered correctly... ???

"Mì quảng noodle soups differ than most normal noodle soups in that  Mì quảng soups have just enough broth to barely cover the noodles. Unlike other Việt noodle soup bowls whose broth will cover the noodles almost completely, the  Mì quảng broth is barely enough to slurp during the meal. If you don’t eat a  Mì quảng bowl fast enough, the broth will generally quickly be soaked up by the noodles.  Mì quảng soups are generally pork & dried shrimp broth based, although some regional and family recipes will use chicken and even duck. What makes  Mì quảng soups unique is the richness of the broth, the lack of it and the crushed peanut toppings on the noodles"

Overall, I still prefer the regular noodle soup where I can customized my own flavor but the mi quang was pretty good too IMO...The one in the photo above must be a presentation stock photo because it looks pretty clean unlike mine... ???

I love pho........spe aking of which, it reminded me a story of long ago.  when the wife and I first got hitched and we were up in the cities for their new year.  We stopped at a restaurant and we order what we thought was pho.  turns out it wasn't.  it was more like those glass noodle dish.

I think I ate there before.  Name sounds familiar but I came for their other specialty the bun bo hue. 

I like such dish over pho cuz it is more flavorful.  Pho is a hit and miss and I don't like my chances to try a new joint just to get disappointed.
