I like that they were gloves here.
In Chicago, they don't even wear gloves at all. 
You can stand there and watch them cut up the greasy duck with greasy hands like a pro.!

Guess just depends on the area and/or individual restaurant/server..?? 

As some places required food workers to wear gloves now...

Cool, I still like the Beijing Duck House in Cupertino more but that place also cost more. I ate there a few months ago and it cost $60 per duck vs. the Beijing Brothers' $38 Peking duck in Texas.
