Title: How do you make kapiak noodles and questions.
Post by: Jiggles on December 28, 2017, 02:37:16 AM
What is the ratio of rice flour and tapioca flour (or whatever flour you use)? What does it mean if your noodles break when you put them into the pot? Is it normal for leftover kapiak to be dry?

I use one bag of rice flour and one bag of tapioca flour, with two cups of hot water. Pour a little at a time to mix, when the dough is soft, it’s good.

The noddles will break into smaller pieces once it’s boiled. Avoid stirring too much.

It’s normal. Put some wet towel over it so it won’t dry up.

I watched a few last week but too much works mixing, rolling, cutting, etc.
