I tired shredded zucchini, mushrooms, onions, parsnips, and carrots in place of meat for a healthier eggroll and it wasn't half bad.... :)

Today's lunch: veggie fried white rice with mushrooms, carrots, peas, and eggs (not as healthy but once is a while is okay) blanched broccoli and cauliflower..

Giggles, looks delish, but I would pass on the rice or at least eat only a really small portion.

I cooked it this morning and my plate is not that big, medium size. I don't usual finish the whole plate so i share it with my co-worker :)

Renaissance, I love spicy food.  I can have rice with red peppers/soy sauce and I'd be a happy camper.    ;D

Granite-Top, I thought you were having the menu for lunch.  Hehehe.   :D
