“Cool Jerk” returns as new beef jerkey with a Laotian recipe
By Bryan Thao Worra
AAP staff writer
MINNEAPOLIS (Nov. 20, 2013) — After a brief hiatus, the Minneapolis-based beef jerky company Cool Jerk has resumed production of its traditional Lao beef jerky. It will soon be available again for purchase in speciality stores, local events and direct order.
Founded in 2010, Lao American artist Mali Kouanchao and her husband Mike Davise established Cool Jerk as a way to share her aunt’s acclaimed recipe for homemade Lao style beef jerky. Kouanchao’s aunt had been making sweet and savory beef jerky for nearly two decades, using traditional seasonings and preparation techniques used in recipes from their home country of Laos.
Traditionally, Lao beef jerky was paired with sticky rice, papaya salad, and other Lao dishes, but Kouanchao says it goes well with almost anything.
