I went to Lancaster County, PA one time some long time ago and the Hmong there took me to an Amish farm for some chickens. They were free. But these aren't free-ranged chickens. Very hard meat.

Some people don't care about quality *shrugs*

I would pay a little more considering I'm putting it into my body.

Probably old chicken... the meat gets harder as it age.

If these chicken were that cheap, they're probably old.

I get mine from a farmer a couple hours from where I live and he's selling his for $5-$6 depending on the size and all around 6-7months old.

If it is chewy then I'm in.  I'm not too sure if the term "hard" is the same as chewy.

Reason for this is easy.  Them guys that drink beer and eating their "bait" can wipe out your inventory so you give them something chewy to eat.  One bite for one beer sounds about right.

They had been used for laying eggs, I was told.  And they had finished and had to be …given away…

A Vietnamese restaurant came with a large pickup to slaughter a whole truckload away.

Not chewy. More like rubbery.  You bite and the meat just won’t come off on first bite. You had to pull hard on it for a bit…

Old hard roosters make one of the best laj.

That’s probably why some took so many.

I heard that a Vietnamese truck was taking them to make pho broth, too.

Right. Egg-laying.

I had never had free chickens before, so I did catch and slaughter about 20 to take home.

I don’t know if they were aged or if they were having too much sex or were pressured too much to lay eggs.

You either drive down the next green valley and up a hill to where the road elbows up “like this” and then …

Or you follow them when they are also going.
