Making a hundred friends is not a miracle. The miracle is to make a single friend who will stand by your side even when hundreds are against you.

I don't have a definitive pho base soup. Every time I make pho it's always different; I'll let you know if I ever come up with a consistent recipe. That said, I've read some rave reviews on Jasmine 26's vegetarian pho. If I'm ever in the city I'll check it out but I don't know how comparable American pho taste buds are to ours.

Also, I wanted to add that very early on in my vegetarian transition I traded regular soy sauce for tamari --a japanese style soy sauce much richer in taste and gluten free. In addition, I would just like to add that some of my must have food staples are qunioa, beans (usually black, kidneys, and chickpeas cus I love making my own hummus), flaxseeds (I ground them then sprinkle them onto everything I possibly can), hemp milk, kale/swiss chards/bokchoy, and tempeh.

i'm not vegan or vegetarian, but thanks for sharing your staples!  O0  many of those are my favorites as well!

D'Explora -
I just wanted to say thanks for the tip on fawm khao. I made it for Thanksgiving day with the additional water and it turned out perfect. The texture I like! I'm so happy that I can make good rolls now!  :D

Well...this was dinner last night.

Made turmeric rice a couple of times.  I'm really liking it with my meals.  You can get my recipe here.

had lots of greek yogurt to use up before it went bad...

buffalo chicken and greek yogurt sammie, greek yogurt with fruit and granola... and couscous medley with tomato basil feta!

chicken alfredo with the works... using greek yogurt substitute!
