Why wait? is there a steak shortage in your neck of the woods? Dieting reasons? ???

Too much fat in prime
The fat gets in your mouth
and clog your tongue and upper jaw
When you boil cook it with blood and the intestines and stomach

I stick to usda choice or select

Grass feed cow are nice too
Lean and the yellow fat is taster

As far as steaks go, as long as you're eating it hot and fresh, I have no complaints.

I do prefer more fatty cuts though. The fat and gristle add so much flavoring.

My wife prefers the leaner filet mignon cut but I prefer the prime and rib-eye cuts..
